Hamburger Soup
 
Ingredients

4 tsp. soft, light margarine
¼ cup diced onion
12 oz lean ground beef
¼ tsp. black pepper
¼ tsp. Tabasco sauce
1 cup water
1 cup low-sodium beef broth
1 bay leaf
1¾ cups frozen mixed vegetables
 
 
Heat margarine in a large pot. Sauté onion, ground beef, black pepper, and Tabasco sauce for 10-15 minutes. Add water, beef broth, bay leaf, and mixed vegetables. Simmer for 10 minutes. Remove bay leaf before serving.

Serves four.
One serving equals ¾ protein, 1 vegetable, 1 fat, ½ free exchange.
